Chicken Stew with Sweet Potatoes and Cabbage

2 lbs Chicken Thighs or breasts
1 large Sweet Potato peeled and diced
2 large russet or gold potato peeled and diced
1 medium cabbage washed and chopped (can replace with cole slaw mix if desired)
2 shallots
4 garlic cloves diced
1 tsp Ground ginger or freshly grated
1 tsp Cumin
½ tsp paprika
½ tsp Cinnamon
1 tsp Salt
1 tsp Pepper
½ cup chicken broth (or chicken bone broth)
4 tbsp olive oil
optional : turmeric fresh or ground
Directions
- Heat pressure cooker
- Mix dry seasonings in separate container and set aside
- Add olive oil to pressure cooker and heat up
- Add chopped onions and saute them for 2 minutes
- Add diced garlic
- Add chopped potatoes, sweet potatoes, and cabbage and stir
- Add chicken broth
- Sprinkle half of your seasoning onto the vegetables
- Add chicken to pressure cooker
- Season with remaining seasoning
- Close lid on pressure cooker and cook for 15-17 minutes
- Release pressure once finished cooking
- Optional: use fork to pull/break apart chicken into stew and let sit on warm for another 5-10 minutes before stirring again
- Serve in a bowl or with rice/your other favorite starch!
